Gond Katira, also known as Tragacanth Gum, is a natural dried sap obtained from certain Middle Eastern and Asian plants. It appears as small, irregular, translucent crystals that swell into a soft, jelly-like texture when soaked in water. Unlike regular edible gond (dink), Gond Katira is cooling in nature and is especially popular during summer. Traditionally used in drinks, falooda, milk preparations, and refreshing sherbets, it is valued in Ayurveda and Unani medicine for its soothing and hydrating properties. Once soaked for a few hours, it expands significantly and becomes soft like jelly , making it easy to consume. Gond Katira is usually soaked overnight before use and added to milk, rose sherbet, falooda, or traditional summer drinks for a refreshing and nourishing boost
